My mission is always to make delicious food with organic ingredients using no gluten, sugar or dairy (apart from the odd bit of goats milk), without compromising on taste – at all. I ferment anything that takes well to being fermented, due to the benefits to gut (& therefore overall) health, & because of its role in breaking down pesky phytic acid; an anti-nutrient found in nuts, seeds, grains & pulses, which leaches minerals from the body.
