Banana cake

I actually just Googled ‘What’s the difference between banana cake & banana bread?’ Turns out it’s quite the debate.
I’m still none the wiser though, so given that I generally disapprove of fruit & bread combinations, I’m going with cake.
This is another of our breakfast cakes that goes down very well with all but one child (always the way!).

2 cups very well mashed bananas
2 cups almond flour
2 tablespoons coconut flour
1/2 teaspoon sea/ himalayan salt
3 tablespoons honey
2 tablespoons melted coconut oil
2 teaspoons vanilla extract
3 eggs
2 tablespoons any milk
1 teaspoon bicarbonate of soda
1 teaspoon apple cider vinegar

• Mix everything together, pour into a shallow tin & bake at 170c for approx 20 mins/ until slightly springy & slightly golden.
