Apparently shrubs are dead trendy with cool cocktail types. They’re also trendy with people looking to make apple cider vinegar taste better. That’s basically what a shrub is – a sweet, tasty vinegar made with fruit, honey & spices which can then be added to anything you like, or added to water like a cordial. This particular recipe tastes EXACTLY like those blackcurrant & liquorice sweets I used to love so much, so it’s tempting not to add too much vinegar.
The basic recipe for a shrub is 75% fruit, 25% spices/ herbs.
• Smash everything together except for the vinegar.
• Put in a bowl/ jar & cover with muslin & leave for 2 days at room temperature.
• Strain into a bottle/ jar & mix in the vinegar.
• It will keep in the fridge for 2 – 3 months.
