Chocolate pie

Technically this is a torte, but I don’t like the word torte, so I’m calling it a pie.

It could very easily be adapted to become an actual pie by the simple addition of a pastry lining, but I like it just the way it is.

This invention came about one night when I was making chocolate & ice cream, which were both in their molton state, & I wondered what would happen if I combined the two…

Magic happened, that’s what!…

For the ice cream:
1 can coconut milk
3 egg yolks
4 tablespoons honey
3 tablespoons cacao/ cocoa powder
1/2 teaspoon sea salt
1/4 teaspoon xanthan gum
Splash vanilla extract
For the chocolate:
90g cacao butter
1 tablespoon coconut oil
70g cacao/ cocoa powder
1 teaspoon lecithin (optional)
Maple syrup to taste
Sea salt to taste

• First make the ice cream. It’s a very simple chuck everything in a blender & blend recipe

• Next make the chocolate; melt the cacao butter & coconut oil on a low heat, then add the rest of the ingredients, stirring continuously. When all mixed in, remove from the heat

• Decant the ice cream mixture, & pour 2 cups of it back into the blender

• Add the melted chocolate & blend them together

• Pour into a dish or individual ramekins, sprinkle with anything you want on the top & leave to set in a fridge for a few hours…
