Raspberry sorbet

So simple & sooo delicious… I’ve never been able to nail a good sorbet, it always went crystallised which annoyed me, but the other day I gave it a go without thinking too much & it worked a treat.

2 big handfuls frozen berries
1/2 a banana
Honey or maple syrup to taste
Splash of water

• Using frozen fruit stops it from ending up icy, & a bit of banana makes it nice & smooth without it tasting bananary. The water helps to get the blender going, but only add the bare minimum. This does strain the blender a bit, but a Vitamix or similar will be up to the job…

• No ice cream maker needed – just put in the freezer to firm up a bit or eat straight away!
