Grain-free waffles

I know a waffle maker is yet another kitchen contraption, & many people try to limit their contraption collection, but not I!
I totally understand the aversion people might have, but when I regularly use something that helps me make delicious things that everyone loves, I’m nothing but grateful.
Saying that, if you have a cast iron griddle pan you could try frying dollops of the batter on that & quite possibly get very similar results.
Anyway, the reason I Iove these is that they give a hearty breakfast with very little fat or sugars, & are very forgiving re.the types of flour used – e.g. to make it lower carb just use mostly almond flour.

175g chestnut flour
85g almond flour
75g tapioca flour
1/2 teaspoon sea/ Himalayan salt
3/4 teaspoon bicarbonate of soda
Splash of vanilla (optional)
1 teaspoon cinnamon (optional)
2-3 tablespoons butter/ coconut oil
2 eggs
Water
Maple syrup (to serve)

• Heat up the waffle maker & melt a couple of tablespoons of butter or coconut oil in a small pan.
• Put all the ingredients into a large jug & add one tablespoon of the butter/ coconut oil to the batter with 1 cup of water.
• Mix everything together with a whisk.
• Slowly add more water until everything mixes in well & you have a thick pouring batter (this doesn’t have to be very accurate – the recipe is very forgiving).
• Grease the waffle maker with the butter/ coconut oil – a small brush is helpful for this.
• Pour in the batter & cook until done.
• Drizzle with maple syrup.
